Spanish Cuisine: Albaricoques, Tortitas Con Chocolate, Crema de Cacahuete

I've been in the kitchen cooking. Again. I believe that makes it twice in as many months.

My first recent kitchen adventure was a delicious and healthy breakfast creation: Pear yogurt, Special K cereal, and dried apricots. I chopped up the dried apricots myself. By hand. With a sharp knife. (Really. I did.) Then I artfully placed the dried fruit onto the yogurt and cereal.

This evening, I served up (for myself) a superb plate of tortitas de arroz con chocolate, generously spread with crema de cacahuete, and topped by a dollop of mermelada de albaricoque. Sadly, the masterpiece was consumed nearly as quickly as it was created. Next time, I think I'll double the recipe. And speaking of recipes, if you'd like either of these, I'd be very happy to share.

  1. You have every right to be so proud of yourself, Mitchell!! These look so good! I usually have two rice cakes every night with almond better and honey.....but....never thought of the chocolate!! Thanks for the tip.

      I can't take credit for the chocolate this time. These rice cakes actually come with a chocolate top coat. But I have in the past taken plain rice cakes and topped with peanut butter, marmalade, and a piece from a chocolate bar. Even better!

  2. You are an inspiration to the cooking impaired, Michael! I am trying something new today - roasted onions and nopales. The nopales are fresh off our prickly pear cactus. They can be really slimy if you just saute them. But their taste is reminiscent of asparagus, which is hard to find and impossibly expensive when you do. Hope this experiment works ...

  4. Soon you'll have your own show on the Food Channel. My Mom and late dad always loved apricot pies but they just aren't available anymore.

      I could make you an apricot pie. My recipe: Buy a ready made apple pie. Scoop out the filling. Dump in apricots.

  6. Mitchell is cooking?!? I'm so impressed I may just hyperventilate! So you're an apricot fan... try filling a tortilla with some ricotta and apricot jam. Pop it in the microwave for a few seconds and then enjoy.

      Maybe I should change the name of my blog, huh? Maybe not.

      I might try that tortilla recipe... except for two problems: hard to find Mexican tortillas here; using the microwave may be too much cooking for me.

      My favorite rice cakes are iced with yogurt. I put peanut butter on those, then a dollop of marmalade, and then a chunk of real chocolate. Even better!
